Now I started pride month vegan challenge. I believe it’s not too late to start it…

Make it start the recipe which is vegan aji de gallina. I bought oyster mushroom instead of chicken. It’s mushroom not oyster. Maybe it’s called oyster caused by its shape. Something similar. At first, I mistook them as Maitake which called in Japanese. But it’s Hiratake, not Maitake. Yes, I prefer to Maitake caused by its name. Because of Mai. Anyway, oyster mushroom broth was simmered so delicious and made it perfect vegan aji de gallina.

I’m sure now… Easy and delicious, even without livestock products. Definitely, it’s not difficult. Why I couldn’t start it more earlier?
